    Prepare the Butter

Melt butter in microwave for 30 seconds to 1 minute or in a small pan over low heat. Set aside 2 Tbsp. melted butter for making dough in next step.

  2. Cinnamon Rolls from Scratch Recipe - Home Chef (4)

    Form and Knead the Dough

Set aside 1/4 cup flour to be used for your work surface. This is called "bench flour", used to prevent dough from sticking. Add remaining flour to large mixing bowl along with reserved 2 Tbsp. butter. Add yogurt, half the powdered sugar, and 1 Tbsp. water. Mix with clean hands to form a rough, shaggy dough. Sprinkle some bench flour on work surface. Turn out dough and knead on work surface until it becomes a smooth and slightly sticky dough ball. Allow dough to rest 5 minutes. In a separate small bowl, stir together remaining butter, cinnamon, brown sugar, and 1/4 tsp. salt.

    Roll the Dough

Flour work surface once more with bench flour and, using a rolling pin, bottle, or small can, flatten dough out into an oval about 8" by 11". No need for a ruler – that's roughly the same size as this recipe card. Spread cinnamon mixture onto dough, covering the entire surface. Starting on the short side, roll up length of dough to make a cylinder.

    Bake the Rolls

Slice dough cylinder into six equal pieces. Spray a small oven-safe pan or 8" pie or cake pan with cooking spray and set rolls inside so they fit snugly against each other. This keeps them from unrolling during baking and makes them puff upwards. Place in oven and bake 30-35 minutes, or until lightly browned on top.

    Make the Frosting

While cinnamon rolls are baking, stir together softened cream cheese, remaining powdered sugar, 1 Tbsp. water, and 1/4 tsp. salt in a small bowl until smooth. Spread or drizzle over hot cinnamon rolls once removed from oven. If cream cheese is taking a while to soften, try setting it on top of a preheated oven for a few minutes. This trick works for butter, too!

    Plate the Dish

Set two cinnamon rolls on each plate and enjoy. The remaining two rolls are extra! Store in your refrigerator for up to a week, or in a freezer for up to two months.

Should you pour heavy cream over cinnamon rolls before baking? ›

Add This for Rich and Gooey Cinnamon Rolls

Julie Clark, the blogger behind the website, notes that after years of research, she discovered that the key to getting perfectly gooey rolls is to “pour heavy cream over the cinnamon buns before baking. THIS is the secret ingredient and what makes the rolls rich and gooey.”

Is heavy cream and heavy whipping cream the same thing? ›

Is melted butter or softened butter better for cinnamon rolls? ›

It can definitely be tempting to just stick that butter in the microwave if you've been storing it in the fridge, which can easily lead to accidentally melting it, but ensuring that your butter is softened will make all the difference: It will make it easier to evenly spread the filling on top of the dough.

What happens if you let cinnamon rolls rise for too long? ›

Can cinnamon rolls rise for too long? Yes definitely! If you let your cinnamon rolls rise for too long you can over-proof them. This can lead to dense rolls or rolls that collapse after baking.

What happens if you use too much butter in dough? ›

Too much butter will result in a very soft, sticky dough that's difficult to shape, and bakes up greasy and dense.

What happens if you add too much flour to cinnamon rolls? ›

You want to add only the amount of flour that it takes so your dough is not sticky. Adding too much flour will make your rolls very dry. Once you have added the appropriate amount of flour, turn your mixer to a low speed and let the machine do all the kneading for you.

Should the cinnamon rolls touch or be kept apart while baking? ›

Give Your Rolls Space

Place the formed cinnamon rolls on a baking sheet 1-2 inches apart to ensure an even, full rise.

Why are my homemade rolls dry? ›

Too much flour, or not the right kind, could be to blame. Dough made only from flour with a high or even average amount of protein (like bread flour or all-purpose flour) can become tough from overmixing.

What does heavy cream do in baking? ›

Why do you use heavy cream in baking? ›

It whips better and holds its shape longer than its whipping cream counterpart, which is why it's used for everything from pastry fillings to pipings. It has a long shelf life in the fridge and can even be frozen and used in a heavy cream recipe later on.
